LAS VEGAS (July 7, 2020) – One of the most anticipated openings of the year, Bugsy & Meyer’s Steakhouse at Flamingo Las Vegas is now open. The $10 million steakhouse embodies the hotel’s nearly 75-year history, while presenting it in a sophisticated, modern way.

The restaurant’s name is a tribute to the founders of Flamingo Las Vegas, Benjamin “Bugsy” Siegel and business partner Meyer Lansky, who famously created the first resort-style hotel on the Strip in 1946 and revolutionized Las Vegas.

On Thursday evening, July 2, Lansky’s grandson, Meyer Lansky II, stopped by to see the brand new steakhouse. He noted that one of the last things Siegel told his grandfather was, “don’t give up on Las Vegas,” and that’s evident with the opening of Bugsy & Meyer’s.
From the menu, the design and the atmosphere, Bugsy & Meyer’s takes old notes and adds new and sophisticated twists. Guests are transported from the moment they arrive, entering through the front of the bakery, past the kitchen and the aged meat cooler, giving them the illusion of discreetly entering through the back as many did decades ago. From there, there are six unique experiences for guests in the space—a lobby and lounge, a central bar, private dining in one of three private dining rooms perfect for groups, a raw bar, a decorative dining room and a hidden lounge— The counting room.
In addition to the classic steakhouse design, the showpiece design from Studio K Creative out of Chicago by renowned architect Jonathan Adler, pairs light natural tones with bright colors, art deco inspiration and intricate detailing. Bugsy & Meyer’s collaborated with New York City-based art consultants SHE HIT PAUSE to create a special collection of curated art featuring exotic wildlife as heroes, including a custom beaded flamingo piece designed by Adler that took approximately 100 hours to create.
Bugsy & Meyer’s menu features classic steakhouse dishes with modern twists. Bugsy & Meyer’s in-house dry aged program is displayed in the restaurant in a frosted glass display. Hand-picked cuts include homegrown, wet aged, dry aged, imported wagyu and more.

Entree specials include single lobster tail, Alaskan king crab, foie gras, B&M scampi, Point Reyes cheese fondue and more. Traditional sides are included on the menu, but guests won’t want to miss signature items like The Heater…Baked and Stuffed with white cheddar, The House sausage, and caramelized onion; truffle potato puree; and lobster mac & cheese. Seafood is the mainstay of the menu, especially with the raw bar kitchen in the main dining room. Enjoy towering shellfish and char-grilled appetizers, shellfish cocktails and crudo. Other meal highlights include prime rib roast, American wagyu short ribs, grilled lamb loin, fresh Dover sole meuniere and more. Desserts are no exception with staples such as The Big Apple, made with white chocolate mousse, caramelized apples, soft caramel and hazelnut crumble.
Joining the steakhouse’s incredibly talented culinary team is winner of the Food Network’s competition series, “Vegas Chef Prizefight,” Lamar Moore. Moore is from Chicago, Illinois, and competed in the toughest job interview of his life, trying to impress a panel of judges, like Anne Burrell and Scott Conant, for the title of Executive Chef at Bugsy & Meyer’s. While Moore is hard at work in the kitchen, guests can lure him into the dining room for a photo. Moore joins Executive Chef, Honorio Mecinas, who brings with him more than 15 years of experience on the Las Vegas Strip.
The cocktail menu pays homage to the past while presenting new take on the original and original. Originating in the Caribbean and a beloved spirit of the 1940s, rum cocktails are featured prominently. Popular cocktails include The Apply Tamed made with Old Forester rye, Pére Magloire calvados VSOP, Lustau Palo cortado sherry, Benedictine liqueur, peychaud’s bitters, angostura bitters, apple chips and lemon swath; Jungle Bird made with Cruzan black lobster rum, Campari, pineapple juice, lime juice, simple syrup with pineapple wedge and leaf; and build-your-own Old Fashioned. Other creations include prohibition-era versions and unique modern cocktails. Bugsy & Meyer’s also offers an extensive wine list with options by the glass and bottle.

Lisa Vanderpump, restaurateur and reality TV star, is opening a restaurant at Flamingo Las Vegas, according to a person with knowledge of the project who was not authorized to speak publicly. The restaurant — unnamed — joins Vanderpump Cocktail Garden at Caesars Palace, opening in 2019, and Vanderpump à Paris at Paris Las Vegas, opening in 2022.
The restaurant has been named “Purple Zebra,” according to a person with knowledge of the project. Clark County construction records list a $3.5 million Purple Zebra restaurant project in Flamingo. County planning records, meanwhile, list a “facade update for Flamingo Las Vegas (Purple Zebra).”

The exhibition also features flamingos that decorate the space in honor of the property, and reproductions of paintings by Art Deco artist Tamara de Lempicka. The whole effect feels like a casual supper club meets Art Deco meets a very elegant greenhouse. The joint also feels sleeker and more understated than Vanderpump’s other restaurants in Vegas.
The Flamingo, Caesars Palace and Paris are all part of the Caesars Entertainment portfolio. R-J has requested comments on the project from a representative of the property.
